To recalibrate this type of valve, turn the knob to as high as it will go. Then pull the knob off. Here you can see the pointer against the stop at 3:30. You need to pull the pointer off the shaft and replace it near 6:00. This should give you enough extra travel to bring the high end temperature near 215 degrees. An anti-tamper screw held the pointer in place on my valve. In my case it required a spline wrench with a small hole in the end. I used a small screw driver to break off the small anti-tamper protrusion in the end of the screw. Then a standard spline wrench was used to remove the screw.

You will most likely have to try different positions for the pointer until the highest temperature is just past boiling. This will give you the widest adjustable temperature range.

 

Here's a front view after recalibration for boiling. This setup will also work great for the boiler. Mash heat control is another story. Hot water heater controls have about five degrees of hysteresis.

 

To figure out where the hole needs to be drilled in the keg, put the whole thing together and mark the keg when the flame spreader is about four inches below the keg bottom.
